line-height:115%;\"><strong>For More Information on Reading Labels See <a title=\"Understanding Labels\" href=\"http:\/\/www.allergyhome.org\/handbook\/table-of-contents\/how-to-avoid-food-allergens\/understanding-labels\/\">Understanding Labels <\/a>in the Living Confidently with Food Allergy Guide<\/strong>\n<\/div>\n<h1 style=\"line-height: 110%;\">Know how to read a food ingredient label to avoid allergen exposure and to prevent a life-threatening reaction.<\/h1>\n<p><em>Created by Michael Pistiner, MD, MSSC &amp;<br \/>\n<a style=\"font-style: italic;\" href=\"http:\/\/www.allergyhome.org\/schools\/about-us\/#sims\">Grennan Sims, RD, LD<\/a><\/em><\/p>\n<h2 style=\"line-height: 110%;\">Everyone responsible for meal and snack preparation needs to know how to read ingredient labels.<\/h2>\n<h3>Allergen Label Reading Basics<\/h3>\n<ul>\n<li>Read (and evaluate) ingredient labels for every food each time it is used.\u00a0 Product formulations may change at any time without notification.<\/li>\n<li>Get more information from manufacturer or supervisor\u00a0 for unclear ingredient labels.<\/li>\n<li>If any doubt of allergen safety then do not offer the item in question.<\/li>\n<li>Keep all food ingredient labels onsite for at least 24 hours following meal service.<\/li>\n<\/ul>\n<h3>Understanding Food Allergen Labeling Laws:<br \/>\nWhat FALCPA does and does not cover.<\/h3>\n<ul>\n<li>FDA requires all packaged food list the eight major food allergens in plain (clear and understandable) language.<\/li>\n<li>Major 8 Allergens: Milk, Egg, Fish, Crustacean Shellfish, Peanuts, Tree Nuts, Wheat, and Soy<\/li>\n<li>These allergens account for over 90 percent of all food allergies in the U.S.<\/li>\n<li>These allergens must be stated if found in flavorings, colorings or other additives.<\/li>\n<li>Current labeling laws only apply to foods regulated by the FDA.\u00a0 It does not apply to most fresh meats\/poultry and certain egg products.<\/li>\n<li>Food allergens labeling laws only apply to the major eight and does not apply to:\n<ul>\n<li>Most fresh meats\/poultly<\/li>\n<li>Certain egg products<\/li>\n<li>Sesame and other seeds<\/li>\n<li>Molluscan shellfish (oysters, clams, mussels and scallops)<\/li>\n<li>Gluten containing grains other than wheat (barley, rye and oats).<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3>Advisory Labels and Cautionary Statements<\/h3>\n<p>Advisory statements are written in numerous formats and under no federal or state regulation<br \/>\n\u201cMay contain\u201d, \u201cProduced in a facility that\u201d, \u201cManufactured on shared equipment with,\u201d etc.<br \/>\nAvoid products with advisory labeling for the allergen in question<\/p>\n<h3>Looking at Ingredient Labels<\/h3>\n<p>Labels can list the 8 major food allergens in one of two ways:<\/p>\n<p><a href=\"http:\/\/www.allergyhome.org\/schools\/files\/2014\/07\/Major-8-Allergens-Can-be-1-of-2-ways-21.jpg\" rel=\"wp-prettyPhoto[3363]\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-3370 size-full\" src=\"http:\/\/www.allergyhome.org\/schools\/files\/2014\/07\/Major-8-Allergens-Can-be-1-of-2-ways-2-e1404957977631.jpg\" alt=\"Major 8 Allergens Can be 1 of 2 ways-2\" width=\"400\" height=\"300\" \/><\/a><\/p>\n<div style=\"clear: both;\">Note:\u00a0 &#8220;<span class=\"il\">Contains&#8221; s<\/span>tatements only apply to the major 8 allergens and are optional. Just because a product does not include a \u201c<span class=\"il\">contains<\/span>\u201d statement, that does not mean the allergen in question is not in the product.<\/div>\n<h3>Hidden Ingredients<\/h3>\n<p>Hidden ingredients are not an obvious part of a food.\u00a0 A person eating the food may have no idea that it contains an allergen.<br \/>\nLabel reading is key to avoiding accidental ingestion of hidden ingredients!<br \/>\nIf you can\u2019t read it, then don\u2019t eat (or serve) it!<\/p>\n<h3>Common Sources of Hidden Ingredients<\/h3>\n<p><strong>Milk<\/strong>:\u00a0 Breads, caramel, hot dogs and deli meat, non-dairy creamers, cheese alternatives, canned tuna, guacamole, chocolate, butter substitutes, sauces\u2026<\/p>\n<p><strong>Eggs<\/strong>:\u00a0 Mayonnaise, meringue, egg substitutes, cake mixes, frosting, pasta, salad dressing, meatballs, sauces, ice cream, glaze on soft pretzels\u2026<\/p>\n<p><strong>Peanuts\/Tree Nuts<\/strong>:\u00a0 Artificial and mixed nuts, desserts, ethnic cuisine, ice cream, barbeque and other sauces, marzipan, nougat, pesto, energy bars, granola, cereal, chocolate candies . . .<\/p>\n<p><strong>Fish\/Shellfish<\/strong>:\u00a0\u00a0 Worcestershire sauce, Caesar salad dressing, imitation crab products, Asian cuisine\u2026<\/p>\n<p><strong>Wheat<\/strong>:\u00a0 All grain based products, processed foods, food starch, soy and other\u00a0 sauces\u2026<\/p>\n<p><strong>Soy<\/strong>:\u00a0 Processed foods, breads, soups, sauces, canned meats, peanut butter, cereals, crackers\u2026<\/p>\n<h3>Celiac Disease and Gluten Sensitivity<\/h3>\n<p>You may be caring for students with celiac disease or non- celiac gluten sensitivity.\u00a0 Celiac disease is a genetic autoimmune\u00a0 disease. Non-celiac gluten sensitivity is a condition that occurs in individuals who are unable to tolerate gluten and experience symptoms similar to those associated with celiac disease. Gluten is a protein found wheat, rye, and barley and their derivatives. Even though oats are inherently gluten-free, they are likely to be contaminated unless they are certified gluten-free.
